About Olive Oil, Extra Virgin Olive Oil

Olive oil is produced by grinding olives and extracting the oil by mechanical or chemical means. Green olives produce bitter oil and overripe olives produce rancid oil. Therefore, for good extra virgin olive oil care is taken to make sure the olive are perfectly ripened.

Olive oil is obtained solely from the fruit of the olive tree (Olea europaea L.) to the exclusion of oils obtained by solvents or re-esterification processes and of any mixture with oils of other kinds.

Feta Cheese and Olive Spread

Feta cheese, sun dried tomatoes and black olives come together as one in the full flavored dip, serve it on toasted triangles of pita bread.

Ingredients

1 (6 ounce) package feta cheese, crumbled

2 spoon olive oil

1 teaspoon lemon juice

1/2 teaspoon minced garlic

2 ounces sun dried tomatoes, softened

1/2 teaspoon dried oregano

1 tablespoon chopped black olives, drained

Preparation Method

In a food processor, place the feta cheese, olive oil, lemon juice, garlic, sun dried tomatoes and oregano. Using the pulse setting, blend the mixture until smooth. Transfer to a medium bowl. Blend in the olives by hand or with a spoon. Refrigerate until serving.
